Cream the butter, add sugar and yolks, of eggs, beat well, add sift ed flour and cinnamon alternately with milk. Fold in stiffly beaten whites of egg, and make in greased tube pan (sand cake tin) in mo- derate oven for 40 to 50 minutes.

Beat the eggs slightly with 1 tablespoon of cream or top milk for each egg, and season with salt und pepper. Pour the mixture in- to a pan containing 1 tablespoon of melted butter or other fat. Cook over hot water, stirring constant- ly until thickened. Remove and serve at once with crisp bacon.

While a great many of the do- mestic rabbits are marked át eight to ten weeks of age and are term- ed "fryers," the mare mature animals are also good. They need longer, slower cooking, aa in fricassees, Casserole dishes, and rabbit pie, and may be used in croquettes, salads, chop suey and other dishes made of previously cooked meat.
Wipe the rabbit meat with a damp cloth cut into pieces for sorving, sprinkle with salt and. papper, and mil in four. Brown lightly in hot fat in a skillet, transfer to a casserole, add some of the fat from the skillet and one- half cupful of hot water. Cover and cook in a moderate oven (350 degroes Fahrenheit) for one and one-half to two hours, or until the meat is tender. Remove the meat, and thicken the gravy sligtly. To each cup of liquid allow one table spoonful of flour, mix with a faw tablespoonfula of cold water, add to the meat drippings, return to the oven, and stir occasionally un- til thickened.".
