Pear Flan,

About 8 Tientsin pears, 4 oz. sugar, gill water, whites of 21 eggs, cochineal, vanilla, short crust, pastry. Melt sugar and water in pan, then boil them to a thin syrup. Peel and cut the pears in halves, remove the cores carefully and put the fruit into the syrup, Cook very gently until the pears are soft (about 20 minuten), Roll out the pastry and make it into u flan and cook in a fairly hot oven. When the pears are cooked, arrange them neatly inside the flan ease, then-boil the syrup in which they were booked until it is thick, colour it with a little cochineal, and pour it with a spoon over the peans. Beat up the white of eggs to a stiff meringue sweeten to taste and flavour it which vanilla, Pile this over the top of the pears. Return the flan to the oven for a few minutes to brown and set the meringue. Remove the flan from the ring and serve.

Green Pea Soup. One grt, green peas, 1 oz. butter, quarts water, onion, a handful of spinach, lettuces, 1 spring of mint, pepper and salt. If fresh pear are used, shell them, wash the pods, put them into a pan with the mint and water and boil for about one hour. Rub the pods through a seive, retura, to the pulp and liquor
