Allow three ounces of rice, one egg, and one and a half ounces of sugar for a pint of milk. Cook the rice and milk in a double saucepan until soft, add the sugar and some flavouring, unless you have already conked a vanilla pod with it, evel a little, add the beaten yolk of the egg, and turn out on to a dish to get cold.

Shape into rissoles, brush those over with the white of egg (slightly braten), roll in brenderumbs, and fry in deep fat until golden brown. Drain thoroughly and serve with a good sweet sauce:

FILLET OF BEEF WITH RICE AND VEGETABLES

Ingredients. --One pound „fillet of” beef, three ounces rice, one eneym- ber, half an onion, one pint slack, onc, egg, three tonators, bread- crumbs, butter, pepper and salt, mushmon stalks.

Instructions. Cut the filled into rounds, half an inch thick; and, fry them quickly on both sides.

Melt an ounce of butter in a saucepan, put in the rice, stir over

the fire for a few minutes and then add the stock and cook till le rice is tender and the stock alasorbed. Add salt and popper and turn the rice on to a plate to cool. Make it into lab cakes the same sizo as the fillets,, brush with - egg, roll in breadcrunts, and "try in doop fat.

Peel the cucumber and cut it into pieces about an inch and a half long, scoop out soine of the contro and then braise them with a little stock.

Halve the tomatoes, scoop out a little of their centres and copk them gently in the oven.
