A plain bread stuffing for fowl is made as follows: Soak one quart of stale bread broken in pieces in cold water and squeeze dry. Season to taste with salt, pepper, poultry seasoning, chopped paraley and a small onion, chopped fine. Add two and one-half tablespoons of fat drippings, melted. Mix thoroughly then add one egg, alightly besten, and the heart, liver and tender parts of the gizzard, chopped fine, and partially boiled. Some cooks prefer to beat the lat in a pan, add the soaked bread, and then add the egg and seasoning. A little pork or liver sausage can be used instead of the chicken liver and gizzard,
