MINCED STEAKS.

Take a pound of fillet steak, mince it finely and season it with salt, pepper, and perhaps a dish of grated horse-radish. Then work in bit by bit assiduously and thoroughly a quarter of a pound of butter. On a heavily-floured board divide the meat into seven or eight parts; make flat balls of these and flour each slightly. CHICKEN COMFORT.

This is a way to make a chicken quite delicious. Half roast, or, if that is impossible, bake it, and then put it in a warm corner while a couple of onions, sliced fairly thinly, are being fried to a delicate brown in the "basting," which. should be dripping. Then cut up the chicken, putting the pieces into a stow pan with the onion, adding a tablespoonful of curry powder, a tablespoonful of butter, and just enough water to cover the whole. Simmer till all of the bird is quite tender, then eat with some squeezes of lemon. A little of the strained liquor can be served as sauce, with the addition of not too much Wor cestershiro noce,

The general idea seems to be that fish have only one part to play in home life; filleted, fried, boiled or baked, they rest in parsleyed and lemon-garlanded state on the dinner table. Yet a few minutes in the Zoo aquarium, or by a fishmonger's alab where millet and mackerel lie in silvery heaps and lobsters flaunt their scarlet livery, are quite enough to prove that the creatures poskes a very definite and most sur- prising decorative value.

Take goldfish, for example. These small wisps of orange and amber, silver and broazy black, are suf- ficiently attractive to be welcomed as drawing room pets; why should they invariably be pushed into the background of the nursery! They add points of interest to the colour scheme, and the sinuous measures of their mazy dance never cease to fascinate. With the lights and shadows which lurk within their crystal bowl, they form a thing of beauty which, even the most sophis ticated candot despise.
