Dried Or Pickled. Almost all the bamboo shoots for export are either dried or pickled. The canning of fresh-bamboo shoots for export has recently been start- ed. The winter crop is gathered in November, December, and January, when the shoot is a mere bud, beneath the surface of the earth. It is discovered by either examining the cracks on the surface of the earth or by feeling the ground with bare feet, the farmors being, highly skilful in using their toes to locate the point of a shoot pot quite above the ground.
