About crabs. Funny little things they are in this country without much body to them, and for this reason they need a lot of dressing. That sounds about as comprehensive as some of the London stores, and I feel half the line should have appeared under my Fashion head- ing. But to return to the shell and the fish have you ever tried scrambled crab 7
The freshly boiled meat of three crabs mixed with six scrambled eggs and served either on toast or in tho shells made bot in the oven. After seeing that the seasoning is applied with artistry the next important point is to bave fresh crabs, freshly cooked. This seems simple enough if you have an electric chafing dish and can do the needful yourself, but if the cook is left to his own devices, he will buy the crab the day before using and throw the tasteless morsels into the pan at the same moment as the eggs, butter and milk. If the dish is to all the bill as the piece an addition of Chinese bean sprouts cooked in well salted water, will be found palatable, and will not interfere with the delicate flavour of the crab.

I have yet to meet a Chinese cook who pays any attention to subtlety in flavour- ing, or to the value of freshly cut vegetables. As an example of this my own cook confronted me with three unsought cauliflowers, and countered my. disapproval with the statement that it didn't matter as they would keep three weeks in the icecbest. I don't hd him unusually foolish over auch matters, and the thing boils itself down to more squeeze tactics, since they will always bus zeral-stale food cheap and charge it up as fresh. This is really a much more important point than is generally realiz- ed, especially in a household containing young children. From the condition of this it is easy to judge the length of time they have been pulled, and arrange some disciplinary measure with the culprit.
When fresh, these vegetables as well as the more usual peas, beans, small cauli- flower, lecks, etc., are preferably eaten as separate dish, each helping served on crisp todst. As a course at a more formal dinner the following mixture may meet with approval:
