COOKING RECIPE.

Braised Tongue.

Casseroles should be used for the pre paration of this dish. Let "a medium- sized tongue soak in salt and water for two hours. Rinse it, put it into a pan with cold water to cover it and bring it slowly to the boil. Then take it out peel off the skin and trim the root. In rather a deep casserole put a bed of mixed vegetables. Put the tongue on the top and add a little salt and enough stock to cover the vegetables,
