CUCUMBER SALAD. INGREDIENTS:-g encumbers. !gill of vinegar, gill of sour cream, salt, pepper, and a pinch of cayenne; 1 lettuce, chives.

METROES-Per! the cucumbers And divide into very thin slices without cut ting the slices right through. Arrange these in a circle in a salad bowl. Wash sad drain the" lettuce well. Chop the chives finely. Put the cream into in basin add the salt, pepper, and cayenue. and stir in the vinegar very gradually.. Toss the lettuce leaves in the dressing and arrange them in the centre of thi cucumber. Sprinkle with the chives and

serve.

This salad is excellent with cull fish of any kind or with cold poultry, and looks and tastes moet, refreshing on very hot days.

EPICUREAN SALAD.

INGREDIENTS.-1. of tomatoes 1 pint, of water, loz of gelatine, a pinch of cayenne, salt, and pepper, 19 pepper. roras, a bunch of herbs, I lemon, or # drops of carinine or cochineal, the white and shell of one egg. 1 pint of inïsed, vegetable salad, mayonnaise sauce.

Maroos Wine the tomatoes, cut them into pieces. put them into a pan with the wce and the gelatine. Add the herbs, Peppereiras, a pinch of salt, the thinly peeled rind of the lemon, and the strain- ed juice. Whisk the white of the egg very slightly: wash and crush the shell and ad hoch to the pan with, the rust, of the ingredients. Whisk all over low.. heat until just on the boil. Buil ap, theu draw the fan to the side of the fee and let the contents burely simmer for about 20 minutes. Alt a few drops, of carmine. cochineal Strain the mixture throagh aclean tex-cloth tied on to the legs of an inverted chair. Put it into a border mold, previously rinsed out in cold, water, and lawda a cold place until set. Have ready a macédoine of veget ables, such as cooked enrrots, turnips, French ans peis, asparagus tips, sprays of cauliflower, cucumber, beetroot, and any cooked vegetable in season. All the vegetables should be cut into dice or into small balls with a vegetable scoop. Seuson well and mix them with Tarn the the mayonnaise dressing. tomato jelly cut or to a suitable dish or into a shallow bowl, and fill the centre' with a mixed vegetables Sprinkle with a few chopped expers and serve.

This salad way be used with any kind of end cooked meat, poultry, or game, o may be served as a separated course.
