THE SEAMAN'S BILL OF FARE
The ship's deg to-day grows fat and contented on the scrups that fall from the fu'c'sle table, scraps which the sea, digs of a few years ago who sat at the same table would have relished in emphatic: preferment to the wretched meagreness of their own monotonous faro.
In those days, days of long voyagre, when the ambrosia of a seaman's epi curean ambitions was ham and eggs, vessels stood away into the uncertainty of an ocean voyage under lofty ‘royals pro visioned only with that which would keep for any length of time.....
Beef was taken out of barrels of brine in which it had soaked for years. Green it was, with here and there deeper shader of altramarine intermingled with the various combinations of the spectrum
If there was no danger of providing a shark with an easy meal the beef or pork was towed astern at a speed of three ar four, kaota "for eight hours or so.. One wonders why and how it was that men worked and endured the hardships of days and weeks of gale, after gale on such wretched fare; but for years no im. provement was made at all, until, in 1907, the Board of Trada stepped in on behalf of the seaman sud compelled the ship owner to provide more adequate provision,
The victualling scale included most of the commodities used in the kitchen at home-fish, potatoes, vegetables, sugar, butter, milk.jam," marmalade, dried fruits, pickles, and one thing they were emphatic over was a daily issue of lime- juice to every man after being out ten days and bound south of the line.
This was to check outbreaks of scurvy and the constant skin diseases which the former food supply produced.
Ever since 1907 the seaman's bill of fare.. has slowly improved, and now after his breakfast porridge the sailor decides to try, a Dover sole before the curry, or if he prefers devilled kidneys on toast be can have those, too, or maybe scrambled egge and a little carried chicken; it is all on the bill of fire.
At luncheon and dinner he is even more generously supplied, so that it is now no exaggeration to say that nearly every seaman, at sea can appease his appetite: on dishes of better. quality and greater selection than he is able to hord in his own home or at that class of restaurant which his income allows him to patronise.
