CHOCOLATE mint pudding is a rich dessert to round off
light meal. Stir 1⁄2 cup of alivered bfanohed almonds with Roast 1⁄2 teaspoon of cooking oil in a shallow baking pan. about 10 minutes in a 300-degree oven, stirring once or twice. In a saucepan, combine ons 4-ounce packaŋa of chocolate pudding mix, 1 tablespoon each of socoa and Instant coffee powder. Stir in 2 cups of milk and cook, stirring, until thick and smooth. Blend in 2 tablespoons of butter of margarine and cool. Stir in half the almonds.
Whip 1 cup of heavy cream stiff with mint extract to taste, a drop of green food colouring and 1⁄2 cup of alfted powdered sugar. Alternate layers of pudding and whipped oream in 6 sherbert or parfait glasses ending with whipped cream and topping with remaining almonds, Garnish with fresh, mint sprigs.
