They hurry, do the trucks. urged by the desire to capture within a few scant hours the fresh perfection of the tomatoes. For these tomatoes were picked only after Mother Nature had in her fullness ripened them redly through to their very hearts, and blessed them with rich vitalising juice.

Right now, too, ripe tomatoes abound in Hong Kong markets. At no season are they finer in flavour. Serve them often, while you may, in saluds, as a relish. Tematoes are a truly abundant source of Vitamin C. A big glass- ful of tomato juice at breakfast, for instance, gives us our supply of this vitarnin for the day.

Another way to enjoy the flav- our and goodness of tomatoes is in cooked dishes. Here canned toma...- toes, condensed tomato soup and tomato juice are particularly suit- ed to our purpose. This ham ring contains tomato soup, is easy to make and is a beautiful blending of meat with tomato flavour,

Baked Ham Ring

11⁄2 pounds raw ham, ground 4 pound fresh pork, ground 11⁄2 cups soft bread crumbs

2 tablespoons chopped onion

14 teaspoon salt

1⁄4 teaspoon pepper

1⁄2 teaspoon salt

1 tablespoon butter 24 teaspoons sugar

Cook the shredded cabbage, un- covered, in the boiling tomato. ju'ce. Add salt and turn cabbage occasionally so that it all cooks in the juice. Cook 15-20 minutes.. Add salt, butter, sugar and pepper and heat thoroughly to blend the flavours. Serves 4.
