Finding The Art In Artichoke

To be able to wrestle with an artichoke was once upon a time a mark of sophistication.

The devotees of the artichoke consider it to be among the best of the market products; others feel that it is very much overrated. The convinced and unconvinced usually agree that the sauce into which it is customary to dip the leaves when they have been pulled is delicious. Plain melted butter, brown butter, lemon flavoured butter, Hollandaise sauce, are all used with the hot vegetable. A vinaigrette sauce, chiffonade dressing or Russian

dressing go well with the cold.

Just a word about the method of preparing the artichokes them- selves so that they may be worthy of a sauce; The outside leaves. should be removed, an inch should be cut off from the top and the stem should be cut off close to the leaves. They should be tied with string to keep their shape. A slice of lemon should be slipped under the stem. They should then be cooked in boiling salted water about twenty minutes, until the leaves will pull easily. They should be drained upside down and the string, of course, removed. The choke may be removed if you like, but this is. often allowed to remain inside, nowadays.

HOLLANDAISE SAUCE

1⁄2 cup butter.

1 tablespoonful vinegar or

lemon juice.

1⁄4 teaspoonful salt.
