WHAT TO DO WITH FISH

If you are worried about what to do with fish you bought here are some recipes that may help you.

SOLE IN CREAM SAUCE

Take one fillet of lemon sole for each person, lay fillets in a butter- ed fireproof dish.

Put the skin and bones of the fish on to boil with a slice of onion, herbs, seasoning, and a pint of water, boil till reduced to half the quantity.

Melt 1oz. butter, add loz. flour. pour on the fish stock and thicken. over the fire.

Add one tablespoonful whipped cream or top of the milk, pour the sauce over the fish, and put all in the oven for fifteen minutes.

Serve decorated with tinned peas.

LING PIE

Take 1lb. any other white fish. Put a layer of uncooked rice in the bottom of a pie dish, then a layer of onion, then fish, then sliced potato. Continue till the dish is full. Pour on a little water and season- ing, cover with pastry and bake in a moderate oven for one hour.

BAKED MACKEREL

Cut the head and fins off the fish, lay the fish in a buttered fireproof dish, add a squeeze of lemon, season- ing, and three tablespoons of water. Cover with greaseproof paper, and bake in the oven for 15 minutes.

FILLETS OF SOLE CREOLE

Take one fillet of plaice or lemon sole per person, fry them in butter till golden. Lay them in a dish for serving, place a slice of fried banana on top of each.

Melt loz. butter in a pap; add one tablespoon tomato sauce, two tables- poons chutney, and a very little water to mix. Bring to boil and serve separately.
