COFFEE RECIPES
COFFEE CREAM FILLING .. One tablespoon butter, 1 table- spoon crystallised sugar, 1 table- spoon cold milk, 1 tablespoon boil- ing water, 1 dessertspoon coffee
essence.

Cream butter and sugar well, making as white as possible. Then add very gradually cold milk; when it is well worked in, add gradually the boiling water, then coffee essence: Bent well. Use as à filling for sponge sandwiches. The success in the making of this cream is the creaming of the but- ter and sugar and of gradually adding the liquids.
COFFEE SANDWICH
Six ounces butter, 6oz. sugar, 3 large eggs, 1 tablespoon coffee essence, 9oz. plain flour, 1 small teaspoon baking powder.
Cream butter and sugar well. Add beaten eggs, then well-sifted flour and baking powder. Divide the mixture into two. Add coffee essence to half, and leave other half plain. Place in well-greased sandwich tins. Bake in a moderate oven 15 to 20 minutes. Turn on to a sieve to cool. When cold, join together with lemon cheese, ice 20 minutes. Turn
on to cake- with coffee glaze, and decorate cooler: When cold join together with angelica and finely chopped with coffee cream and cover top
with coffee icing.
