WHATS FOR
PUDDING?
Something new-and something good
FLEET STREET PUDDING Quarter-up butter, two egg yolks, one-and-half cups flour, three tea- spoons baking powder, quarter- teaspoon vanilla essence, one cup castor sugar, half-cup milk, 13202 unsweetened chocolate, two whites of eggs, one tablespoon made coffee.
Cream butter, add half the gar by degrees, beat yolks of eggs till thick and honey coloured, add gradually to it remainder of sugar. Stär mixtures together, add milk alternately with flour sifted with baking powder, a pinch of salt, and a saltspoon of ground cinnamon
Stir in melted chocolate, fold in lightly stiffly frothed whites of eggs and sanilla, and bake in a tin with a hole in the centre or steam in a similar mould.
Fill centre with whipped cream sweetened and flavoured to taste and pour round the following
sauce.

Sauce: Boil one cup castor sugar with half-cup water and
a few grains of cream of tartar until a clear syrup.
Melt 12oz. unsweetened choco- late, and pour on to it gradually, stirring all the time, the hot syrup. Flavour with quarter-teaspoon vanilla.

The pudding can be served either hot or cold, but the sauce must be hot.
