cozicerred with warring our fish course. Most of us have fish at least once a week, so here are some interesting recipes you might try, or, bet- ter still perhaps, hand on to your Chinese cock. I hope you will find having the recipes in both English and Chinese as useful as it looks! And then readers have suggested the delights of Spanish Egg and Coconut Angel Cake so here they are for you to try, too. Do follow the example and send along your favourites for the rest of us to try, and per- haps we'll manage to have them printed in Chinese well

Fish A La Japonaise

1 large fish

Bone and skin the fish, cut each

half into three or four pieces (20- cording to the size of the fish).

sprinkle each piece with salt and pepper, roll in flour and then in beaten eggs, and lastly in the crumbs, cook in hot fat (deep fry- ing) for 10 minutes, drain on paper. Cut the tomatoes in half, put on a tin plate, sprinkle with salt and pepper and a tablespoonful of but- ter cook in a quick oven until to- matoes are soft Arrange fish on a plate and make a border of to- matoes. Serve with sauce.

Salmon Au Gratin

1 tin salmon,

1 teacupful bread crumbs, 1 tablespoon butter,

2 tablespoons vinegar, 2 tablespoons oil,

1 oz. grated cheese.

Pas the salmon into à ple dish, then mix the oil, vinegar and liquor from the salmon well together and pour over the salmor. Then shake the grated cheese over it and last- ly cover with bread crumbs. Place the butter on the top and bake for 20 minutes.

Fish Balls

Remains of any cold fish, bread crumbs, 2 eggs, potato or rice (boiled) pepper and salt, anchovy

SPANISH EGG.

Cut the top of a small round French or dinner roll, scoop out the soft bread, moisten the inside of the roll with a little milk, add a tiny piece of butter, a little chop- ped ham, or grated cheese, and carefully break the egg in the roll, seasoning with salt and pepper. Cook in a deep frying pan in hot oil basting the egg continually with the ol till it is set and till the roll is crisp and golden.

COCONUT ANGEL CAKE Beat 1 cupful of egg whites until frothy, then add two tablespoonfuls of water, one teaspoonful of cream of tartar, 1 teaspoonful of salt and 1 teaspoonful of vanilla. Con tinue beating weil the whites me stiff but nor dry. Sprinkle over the beaten whites I capfuls of sifted gramlated sugar and fold in carefully with a spatula.
