be a good cakemaker, and it's not e so easy. For of all the branches of the lovely art of cookery the hardest to master is the mak- ing and baking of cakes.

Remensher to have the best of materials, and get your, ingredi: ents assembled and your utensils ready before the actual business begins. You have to measure, too, to get the perfect cake.

There are three distinct ways, of mixing ingredients for enkes. The rich fruit or madeira cake should have the "necessary butter and sugar. beaten well together with a wooden spoon until they have blended to a thick cream, The eggs added one at a time and beaten well; and the fer, after sifting, should be folded in to the other ingredients.

· Plain, rukes do not need mich preparation. After the four has hern sieved the fat should be rubbed into it until the mixture resembles breadcrumbs. The other "dry ingredients should. be added, and enough milk stirred in to mix all together,

Add Jenon essence to liquids, then stir in dry ingrédients, by degrees, benting slowly am constantly as you add. Divide mixture between Two buttered sandwich tins. Bake in moderate, oven about, 30 minutes. Chocolate Layer Cake Measure, after sifting three limes, 3 cups of 'flour and sift again with 3 teaspoonfuls of bak- ing powder, Cream cup of shortening with 2 cups of powder- ed sugar. Add the flour alteri nately with 1 cup of milk, beating throughly after each addition. Let the last of the flour be the last addition. Beat stiff, but not too dry, the whites of eggs. Flavour Fold into cake batter. with 1 teaspoonful of vanilla and

teaspoon of almond extract. Bake in three layers in oven of 375 deg. F. Chocolate Filling. Melt over hot water 4 squares of chocolate. Beat until very light the yolks of two eggs. Add gradually 116 cups of sugar. Then add one teaspoonful " of hutter and 14 cup of milk. Add a few grains of salt. Mix all-to- gether well and bring to boil, stir- ring every minute. Boil for about I minute. Take from the fire, ndd melted chocolate, I teaspoon- ful of vanilla, and 1⁄2 teaspoon of almond. Savouring. Bent unti very glossy and the filling s heavy enough to spread without running.
