4 oz. ground rice, 2 eggs, a pinch

of salt. 1 oz, of butter or Karine, 1 quart of milk, 1⁄4 tes- spoon of grated nutmeg, 3 sugar. Mix the rice and salt, amoothly with a little cold milk. Boil the remainder of the milk. and pour it on to the rice. Return to the pan and stir over a low heat until the mixture boils and. thickens. Add the butter and sugar and remove the pan from the stove. Allow it to cool for 1 or 2 minutes, then stir In the beaten egys and nutmeg. Mix well and put. the mixture into a greased pie dish on a baking tin and bake in a fairly hot oven for about 4 of an hour. Serve hot.
Parsnip Soup
3. of parsnips. 11⁄2 oz. of fat, 2 quarts of stock (bane vegetable jor cereal), 1 gill of milk, salt and nepper. Wash and peel the par- salps and cut them into slices. Melt the fat in a saucepan, put in the parsnips and simmer gently without browning for 10 minutes. Pour in enough of the stock to cover, bring to the boil, simmer until the parsnips are soft. Rub through a sieve, return the puree to the pan with the rest of the bail stirring all the time. Senaon and serve with dieed fried brend.
Lobeler au Gratin
1 lobster (split open), 1 oz. of butter, 1⁄2 oz. of flour, juice of 1⁄2 a lemon, gill of milk. 1 egg, a Ittle nutmeg and cayenne, ali to taste, 2 tablespoons of bread- crumbs. Remove the flesh from: the body and claws of the lobster.
