Raisin Cream Caramel.
| Put one pound of icing sugar into Ja saucepan, with a piece of butter the size of an egg and a tablespoon- ful of milk. Melt the butter and sugar slowly, then boll gently till a little of the caramel dropped intʊ cold water forms a soft ball. Now add a teacupful of seedless raisins. Remove the saucepan from the fire, and beat the mixture with a wooden spoon till it is quite creamy. Tura out on to a slightly buttered dish, press into a nice block, and cut into squares while it is still warm.
