Egg plant is a vegetable that needs apecial methods of prepara- tion to bring out its flavour. Un- like the great majority of vegéta- bles it is not good cooked simply in water or by steam, but fried au gratin mashed, baked, diced or cub. ed, fried or made into a steak.
Panned Oysters.
Melt 2 tablespoons butter in an omelet pan, add & tablespoons flour, mixed with 4 teaspoon salt, % teaspoon paprika; stir until. smooth, then add I tablespoon each chill sauce and tomato catsup.
Cook 2 cups cleaned oysters un- til plump and gilla curled, add to sauce. Sprinkla with tablespoon jfinely chopped parsley and 2.table- epoons finely chopped celery. Heat thoroughly and serve on hot 'but tered toast.
Lamb Croquettes en Surprise. Fry 1 tablespoon finely chopped onion in 2 tablespoons butter for 5 minutes; remové onion. To. but-1 ter add 4 tablespoons flour and 1 cup stocks or chicken broth, cook 2 minutes. Add 1-2/3 cups cold cook- ed lamb, chopped fine, season with salt, pepper, simmer until meat has absorbed sate. Add 1 tablespoon finely chopped parsley, spread on plate to cool, shape in saucer, shape cakes, put a teaspoon of left over peas in the centre, work mixture over peas, shape, roll in crumbs, egg and crumbs and fry in deep fat. 416
