WOMEN HOPELESS
AT FIGURES.
Evidence Found In Bridge Scores.
Advice on what to say and what to avold when speaking to an au- dience of women was given by Mrs. Alfred
Watt, founder of the Women's Institutes in the British Isles, in a speech in London to would-be women orators.
Among the things she warned them to avoid at all costs were general statements, anything which required long explanation, facts which were out of the picture, and long and frequent statistics. She said:
"Most women are constitutionally unable to think in figures. I may be belittling some members of my sax when I say this, but having got along. all my life without figures, I am not inclined to be predisposedį towards those exceptional women who are brilliant at figures.
"Have you ever watched four women round a bridge table adding up their scores? No two of them will do it in the same way, "
"The most extraordinary examples of feminine calculation go on when the average woman has to enter into the realm of figures."

On the question of clothes, Miss E. H. Pratt said she thought women had much to learn from men. She added:
"I am not going to suggest that men are very thrilling to look at, but I think we women are even worse. I believe that, if we cared, we could think out a much more artistic and, serviceable form of clothing than that worn by either men or women to-day."

Curried Cod with Fried Rice Bolled Shoulder of Mutton, Caper Sauce Buttered Bamboo Shoots Devonshire Junket Dinner. Vermicelli Soup Fried Whitebait with Lemon Jugged Hare Mashed Turnips Chocolate and Walnut Souffle Housewives will be pleased to know that whitebaits are again procurable at the markets. They are a delicate little fish and ex ceedingly tender; therefore in cook- ing whitebait, lift them carefully aud lay them gently on

a time to shake off the superfluous flour. Have ready frying pan with boiling fat and cook the whitebaits. Lift to draining, tin before serving. Whitebaita should only be very delicately colour d not really browned. Sprinkle generously with salt and cayenne pepper and send to table accompanied by le mon or sauce, tartare,
Jugged Hare.
'One hare, some veal forcement, 3 oz. butter, 2 oz. flour, 1 onion stuck with 6 cloves, 2 wineglass of port, 11⁄2 pints of good beef stock, 1 lemon, pepper, saft and 2 dozen cocked chestnuts.
Dry the hare well cut into neat pieces, flour them and fry in the butter. Pour in the stock until it boils, then put the gravy, into, an earthenware jar with the hare, onion, then rind of lemon, pepper and salt to taste, chestnuts and one glass of port.
Cover closely, put the jar into a moderate oven and let the contents almmer gently for 3 to 4 hours un- til the hare is tender. Make some balls of veal forcemeat to which the chopped liver of the hare has been added and either fry or bake them. When the hare is cooked,) add the second glass of port to the gravy and strain it over the hare. Garnish with forcemeat balls, serve with red currant jelly.
