This is a very nice pickle and is simple one to prepare. Boil the beetroot in the
crdinary way, being careful not to break
any of the root fibres, nor is cut the skin, or the red-juice will escape. When the beetroot is cooked, remove the skin, and cut is into cubes of about one inch, put then into a jar and spricklewith a little salt. Boil one quart of vinegar with one dance of whole black popper, and the same quantity of dry ginger broken up. It DEDDELL spices such as clovis, nutmeg and cinnamon are preferred, leave out the ginger, When the vinegar is quite cold poat it over the beetroot, cover the jar and, tie it down decurely. This pickle is excellent, served Ian vegetable with earned hump, mutton ham, or in fact any salted meat. It should be made hot and sorted in a vegetablo

This is nothor very simple pickle to make, and one that is always appreciated. Take a good firm red cabbage, wash it well in many waters, then brud it very finely, nad spread it out on a big dish, Sprinkle
gol layer of salt over it, and lot it' renia on the dish for twenty-four hours. At the end of that time drain off any liquor that may be on the dish, and put the cablage into a wide.necked jar. Propare a quart of vinegar by boiling it with one ounce of whole black pepper, a quarter of an ounce of cloves, a little men and a stick.of.cinnamon. When the vinegar is quite cold, pour, it over the cabbage, Corer and tie down the jar securely, Do not put this pieklo into the sun, or the
