THE GENIAL GOANNA”
"Splitter" writes in an Australian paper : Some of us had a fencing contract |near Cobar (N.8. W.), in 1878. We devia- ed all sorts of schemes to prevent the goannas robbing our camp of the catables, and most of the schemes were useless. At last we had all the items, jointly and sever Fally on swaying wires, and the goannas eran then afton.bested us, leaving us with out our dinner. It was nothing unusual when we arrived at the tent door to have to dodge a whole tornade of goannas: rush- ing out and Reding like a horizontal deluge for the nearest tree. My mate

cheery habit of chasing the EEN JAA tree, and as the hard shell gentleman. usually slackens speed when he has got up a for foot, not being able to see anything behind him, an aotiye man camspting up. and grasp him by the tail, and with a quick jerk fetch him whack on the ground, sa Samuel was usually successful at this, and the whoop he used to give as he struck the earth's crust with the goanna's head something I can hear in my dreams even after all these years. But Samuel- foll-in- at last. We came home to dinner and the usual tally-ho commenced. Samuel caught his roptile all right (a fairly larga one), but. instead of being banged on the ground it somehow flew over his shoulder' and fried to rush down his spine. When Samuels grip on the tail pulled it up it naturally clawed all it knew at his back, If he had Jet it go instantly it would havd fled down over h
his pants and struck for
: out
the Northern Territory, but in hia, axcite ment he yelled and tried to tear it off, and
this only made it hold on harder. It took bim just three seconds to realise that it was cheaper to let go, but at the end of that time his back looked as if it had been ha rowed. After that Samuel contented him self with throwing things at the enemy...

MODES AND MATTERS FEMININE.
Betty's London Letter.
LONDON, December 30,
THE UBIQUITOUS Motor CAP.- With the dawn of the new year and the prospect of brighter weather there is one fashion which I hope will disappear as rapidly as it ovme, I refer to that thing without shape and void the so-called motor esp. Originally designed as a useful headgear (for wear. ing when driving) by motor enthusiasts, it is now worn on every possible and im. possible occasion by women of all descrip tions-old, young, plain and pretty-and with every costume, suitable or unsuitable, The only occasions on which such atrocious. ly ugly headgear should be tolerated, besides when motoring. is perhaps on a wet day at the golf links, as, owing to its substance and shaplessness, it is fairly water-proof. My women friends in Hong kong, if it is not too late, I beseech you to avoid introducing into your colony the hideous motor esp. [Alas! too late, Betty.-ED.]
SOMETHING NEW IN SKIRTS.-The latest way of ornamenting a skirt is to put at the hem a band of heavior material. For in- stance, when the dress is of silk, broad hem of velvet is the correct finish; when of Indian muslin the skirt should be Gnished with a hem of silk.
AT THE THEATRES.-Amongst the sno cesses of the week is the revival of "Peter Pan" at the Duke of York's Theatre. Written by MrJ. M. Barrie and splendidly poted by Mr Gerald du Maurier, Miss Cissy Loftus and others it appeals equally to children and grown up people. At Drury Lane and at many of the surborban theatres pantomime. reigns supreme. I must con fees that my only joy in pantomime exists in the contemplation of the audience of children so visibly and thoroughly enjoy. ing themselves. Somehow, fairy tale which one once delighted in, pulled re- morselessly to pieces in order to introduce clowns, jugglers, and comic songs of a vulgarly humourous description does not enthuse me. Neither do I enjoy seeing men's parts played by women and the women's by men, though this I know is an essential point in pantomime. An amusing alory relating to the divine Sarah Bernhardt is going the rounds. It appears at the great tragedienne has re- solved to tour Texas with a circus tent as a protest against the Trust which has shut the doors of the Texan theatres in her face, so to speak. Immediately on announe- ing her intention her ropresentative receiv ed applications from numerous concerna who wished to obtain places in the afore- said tent for side shows of fat women, freaks, aword swallowers, etc. These applications from persone evidently ignorant of her statas are regarded by Madame Bernhardt na, trop ridicule.
! RECEIPTS FOR HONGKONG HOUSEWIVES.
Sheep's Head Pie-Cleanse the sheep's hood and soak in cold salt and water overnight; then boil in slightly salt- ad water until tender. Remove the meat from the bones and cut it up. Make the brain into little balls by mixing it with an equal quantity of breadcrumbs, binding it with egg. Arrange the meat in
a pie dish, with a liberal quantity of hard boiled eggs, fill up the dish with the stock, cover with pie-crust and bake, until the crust is cooked. Servo either hot or cold.
Another method of using sheep's head in
to proceed as above putting the meat, etc., into a mould decorated with hard boiled eggs (instead of into a pie dish) and fill with some strong stock. Put the mould on ico and turn out when cold.
