CHINESE AND INDIAN DIETS.

The weights given in the scale of diets are for uncooked provisions, which are to be cooked according to the naval customs of the two races respectively.

Only good, succulent and nutritious vegetables are to be issued, and stalks and midribs are so far as possible to be excluded.

CHUTNEY.—To be prepared according to the following formula: Onions one ounce, Garlic one drachm, Chillies three drachms. To these when cooked the oil of the dietary is to be added before being issued.

CONGEE.—Each pint to contain 2 ozs. rice, 4 ozs. beans (with salt). Except on Sunday and Wednesday when it will consist of 3 ozs. rice and 1½ ozs. sugar.

A Chinese prisoner sentenced to two years and upwards who is in the 1st Class stage shall be allowed 6 ozs. of pork or 6 ozs. of chicken on Sundays in addition to the prescribed diet.

An Indian prisoner sentenced to 2 years and upwards who is in the 1st Class stage will be allowed 8 ozs. of chicken on Sundays in addition to the prescribed diet.

TEA.—(Indian Diets) Each oz. of tea to include ½ oz. sugar.
