CHINESE AND INDIAN DIETS.

The weights given in the scale of diets are for uncooked provisions, which are to be cooked according to the usual customs of the two races respectively.

Only good, succulent and mutritions vegetables are to be issued, and stalks and midribs are so far as poss- ible to be excluded.

CHUTNEY,—To be prepared according to the following formula :—Unions one ounce, Garlic one dracion Chillies three drachins.

To these when cooked the oil of the dietary to be added before being issued.

CONGEE.—Esch pint to contain 2 ozs. rice † oz, beans (with sult,)

Except on Sunday and Wednesday when it will consist of 3 ozs, rice and 1 oz, sugar,

A Chinese prisoner sentenced to two years and upwards who is in the 1st Class stage shall be allowed 6

uzs, of pork or 6 ozs, of chicken on Sundays in addition to the prescribed diet.

An Indinu prisoner sentenced to 2 years and upwards who is in the 1st Class stuge will be allowed

8 oza, of chicken on Sundays in addition to the prescribed diet.
