The above represents the quantity for two meals, morning and evening. 2 oz. of rice will be deducted from each prisoner in Nos. 1, 2, and 3 and made into congee, 1 pint of which is to be served at mid-day.
Chinese prisoners sentenced to imprisonment with hard labour for upwards of 2 years will have 4 oz. pork, once a week, after they have served the first 6 months of their imprisonment. Such prisoners who are excused hard labour by the Surgeon and placed on No. 3 Industrial Light Labour will not be allowed pork, except when ordered in special cases by the Surgeon.
Prisoners employed on public works will receive the same diet as prisoners sentenced to imprisonment with hard labour for upwards of 2 years. When employed at places where the drinking water is liable to drainage pollution, they may be supplied with rice-water congee to drink; 14 oz. of rice to each pint of water.
